Fresh strawberries give a cake acidity and freshness, but they are about 90% water. The main defect is weeping: the berries release juice and the cake gets wet. Nothing is cooked here; the whole job is preparation and placement.
Ingredients and what each one does
Only strawberries. They give flavour, colour on the cut face and the acidity that cuts through rich cream. Choose firm, fully ripe, fragrant berries; those that are still white near the stem have no flavour.
How to prepare them
- Wash quickly and don’t soak, because the berries absorb water. Rinse under a tap and dry at once on a towel. Surface water ends up in the cake and thins the cream.
- Remove the hulls and slice about 5 mm thick. Thinner slices are hard to lay flat; thicker ones make a layer that slides apart. Even thickness gives a level layer.
- Blot the cut faces with paper towels: the cut surface is where juice escapes. The drier the slice, the longer the layer stays clean.
- Arrange the slices on the cream, slightly overlapping but without gaps. Ideally there’s cream on both sides of the fruit: below it insulates the sponge, above it presses the berries in place. Pipe a ring of cream around the edge so the juice never reaches the side of the cake.
- Assemble as close to serving as you can. The longer the cake stands, the deeper the juice travels.
What can go wrong
- Wet sponge under the berries. The berries weren’t dried or were laid straight onto the sponge without cream.
- Sour, flavourless berries. Out of season or underripe. You can sprinkle the slices with a little sugar for 10 minutes, then drain and dry them: flavour concentrates but the fruit softens. Try it and judge.
- Cream goes thin. Juice got into it, and water dilutes any cream.
- Slices slide when cutting. The layer is too thick or too slippery; use a sharp knife and wipe it between cuts.
Substitutions
Raspberries, blueberries or sliced peaches follow the same logic: dry them and set them between layers of cream. Frozen strawberries aren’t good raw once thawed, because they go soft and wet; cook them into a filling instead.
Storage
Keep a cake with strawberries in the fridge and eat it within 1–2 days. Sliced berries on their own keep covered for up to a day.
